Ganne ka Sirka / Khall (Sugarcane vinegar)

A sour liquid obtained by fermenting sugarcane juice, used as a health tonic and in cooking.

Ingredients

Aab-i-Nai Shakar / Ganne ka Ras (sugarcane juice) 1 L; Khall / Sirka (vinegar) 50 mL

Method of Preparation

Pour fresh sugarcane juice into a clean, dry earthen pitcher along with vinegar as a fermentation starter. Cover the mouth with cotton cloth and keep in the sun for 60 days, checking for fermentation. Black mustard or garlic cloves may be added for pungency. Filter through cotton cloth and store in a glass bottle. Jaggery dissolved and filtered in water may be used instead of sugarcane juice. Serving: 20-25 mL mixed in water or other food items.

Health Benefits

A good appetizer that aids digestion and acts as a blood thinner, improving microcirculation. Two teaspoons after heavy meals relieve flatulence. Cooling effect useful in summer drinks; frequent use in epidemics helps protect from disease. Used in salad dressings, pickles and chutney. Note: Pure vinegar may cause sore throat; not recommended in winter.
